Join us at 1:00 p.m. at the Coyote Aventuras office. After introductions, we’ll board the Coyote van to head to our destinations and enjoy an immersive and unforgettable experience with Oaxaca’s unique ancestral drink.
At the heart of Oaxaca lies a cultural treasure steeped in tradition: mezcal. Made using century-old methods passed down from generation to generation, mezcal embodies the spirit of its place of origin. Oaxaca’s rugged landscape, rich in agave plants, provides the raw material for this revered liquor. Every step in the production of mezcal is a testament to craftsmanship, from harvesting the agave hearts, known as piñas, to the meticulous processes of cooking, fermenting, and distilling. But mezcal is more than just a drink; it’s a cultural emblem, deeply intertwined with local rituals and celebrations. In Oaxaca, it’s not uncommon to see mezcaleros tending their rustic distilleries or distillation pits with reverence, their craft reflecting the soul of the land. The result is a liquor that transcends the simple drink, offering a taste of Oaxaca’s rich heritage in every sip.
Our mezcal experience will take you to visit 2 distilleries, starting in the world’s mezcal capital, Santiago Matatlán, where we will visit one. In Santiago Matatlán, the smoky scent of agave fills the air, echoing the ancestral tradition of artisanal mezcal production that has made this town known worldwide.
Our next stop will be a ranch in the local community of Unión Zapata, where you will taste some of the region’s best mezcals. Here, we will learn about the mezcal production process, from agave harvesting to the final distillation of its fermented fibers. This journey through the world of mezcal emphasizes not only the drink itself but also its various medicinal effects according to Zapotec culture. You will learn how to enjoy mezcal respectfully, stimulating all of our senses and always reminding us to drink slowly and savor in good company.
These distilleries have been selected to make you reflect on the contrasts within the mezcal industry, specifically how economic resources are distributed within it. As the sun sets over the Central Valley, we’ll toast to a beautiful day immersed in the world of this ancestral drink. We’ll have you back at the Coyote Aventuras office by 7:00 p.m.!

13:00 Meet at Coyote Aventuras Office
13:10 Transfer to Matatlán
14:00 Introduction and conversations about mezcal, farming, sustainability, etc. Mezcal tasting with a mezcal expert.
15:30 Transfer to the second destilery in Unión Zapata
16:00 Mezcal experience with the Mezcal expert and their family, ritual, walk through the fields during the sunset and lunch.
17:00 Transfer to Oaxaca City
18:00 Arrival in Oaxaca City
